It's PIE Time

Just in time for the school "Throw a Pie in your Teacher's Face" campaign to raise money for the music program....I've decided to post my Favorite Pie Recipe!
Brooke's Class raised the most money and will get to throw a pie at their teacher and principal tomorrow - the last day of school! I just hope I can get there in time to video...
Chocolate Chip Pie (Paula Deen's Recipe)
What You'll need:
3/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 1/4 teaspoons baking powder
1 cup (2-sticks) unsalted butter, softened
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
3 large eggs
1 tablespoon vanilla extract
3 cups semisweet chocolate chips
2 cups chopped walnuts, optional
(Serve with Whipped Cream or Ice Cream)

Preheat oven to 350 degrees F. Grease 2 (9-inch) pie plates; set aside.
In a large bowl, sift together the flour, salt, baking soda, and baking powder.
In the bowl of an electric mixer, cream together butter, brown sugar, and granulated sugar. Add the eggs, 1 at a time, beating until incorporated. Beat in the vanilla. Add flour mixture, a little at a time, and mix until fully combined. Fold in the 3 cups chocolate chips and, if desired, the walnuts.

Divide the dough between the prepared pie plates and smooth the tops with a spatula. Bake about 30 minutes or until pies are golden and slightly firm to the touch but still soft. If the pies begin to darken too much before they are baked through, cover with foil and continue baking. Let pies cool completely on a wire rack.

Life got the best of me....

It's been awhile..we had a wonderful Mother's Day with the family. Our puppy is doing great and she is starting to learn new tricks! My nephew's baseball team went undefeated and playing in a Tournament tonight! I am so proud of him. Brooke entered (last minute decision) in the Randall County Playday on Sunday. Now we know it's the 3rd Sunday of every month and a great Playday! She got 4th place in Barrels - would've been 1st but she knocked over the last barrel and had 5 pts added on her time so she still took 4th with adding 5 pts. Way to go Brooke and Diamond! He is an amazing horse! We are trying out new bits and finding out lots of new things in this rodeo life...we may need a different type bit for Poles...he gets so excited once he runs barrels - she needs a lot of bit to help control him!

Memorial Day - planning on staying home for the long weekend! Can't find the energy to travel to Mom's and Jeff is finally finished with the Carlsbad, NM job next week! We were hoping to have him home during the week all summer to only find out bad news last week - he was chosen to help run a crew on a Maintenance Line in Hobbs, NM that runs all the way to Midland. You can imagine how bummed we both were...It's part of it but ready for some more time with him this summer! I am happy to have the horses in our lives because it keeps us busy doing something we all love to do!

I've decided to also let Blaine play T-Ball through YMCA. He really enjoys to play and is pretty good at hitting the ball. Callie is a great in the outfield...she brings us back the ball!

Oh, and the toothfairy visited our house again last week...Brooke lost another tooth! The school is raising money for the music program and she gave all her tooth fairy money to her class so I matched her contribution! If they raise the most money, they will get to throw a PIE in the Principal's face! She's up for the challenge! Sorry Mr. Hamil! Only 7 more days left in school! Ready for Summer!

I hate the Tooth Fairy

No I don't really hate her..she just fell asleep last night and almost had a mishap... By the way, do all 1st Graders lose this many teeth in 1 year? This is like our 4th or 5th and Brooke is starting to look like a Jack-O-Lantern? I'll add her picture later....my little toothless wonder....

I went in this morning with the GREAT IDEA to have Brooke jump out of bed and let the new puppy out (so the cleaver tooth fairy could put money under her pillow and snatch the tooth). Only 1 problem, I couldn't find the tooth? School has this great "plastic treasure box" they hand out to the kids when they lose a tooth...the bright yellow treasure box was no where to be found. It was there when I put her to bed....I was frantic; stripping down the bed, looking inside the pillowcase, on the floor, under the bed...trying to do this before Brooke came back for her "tooth fairy" surprise...disaster is all I could imagine at the time.....


Well, It was STUCK and good thing it was YELLOW - I had to move the bed because it was stuck between the bed and the wood blinds in her window....

I'd love to see blogs on your next tooth fairy moment....I'll have to get an espresso for the next tooth fairy moment so :"she" doesn't fall asleep before SHOW TIME!

Chocolate Cherry Crisp

What could be better than Chocolate & Cherry's.....it's a great combination in this easy dessert!
What you'll need:
  1. 1/2 c. Bisquick
  2. 1/2 c. Quick Cooking Oatmeal
  3. 1/2 c. Brown Sugar
  4. 1/4 c.Butter
  5. 1 can Cherry Pie Filling
  6. 1/2 c. Semi-Sweet Chocolate Chips

Preheat over to 350. Place Cherry Pie Filling in 8x8x2 pan.

Brooke could eat this all by itself....

Next, in a bowl mix the dry ingredients together. Add the butter and stir in until crumbly. You can take two knives and crisscross the butter into small pieces while mixing. Add chocolate chips!
Bake for 30 minutes and serve warm! .

KID SHOE CRAZY


I went to the pre-sale last night and it was worth it. I got all name brand shoes for Brooke & Blaine....everything in the whole store is $20 and hair bows $1. I got 10 hair bows...HELLO! I was excited!
